On a golden summer morning, oyster farmer Greg Foote of Dirigo Marine Resources tended to his farm’s precious oysters growing in cages in the cerulean waters of Casco Bay. During the summer months, while the ocean waters are still calm and before the sun climbs high into the sky, oyster farmers like Foote embark on daily morning commutes to their farms, where they heave cages from the water and then carefully sort and clean the oysters growing within to prepare them for market.
Jacqueline Clark is an attorney who lives in Brunswick. In her spare time, she runs her passion project, the Briny Babe, a blog that documents her experience with oysters—from working alongside farmers to creating oyster-centric travel guides to crafting oyster and other seafood recipes.
